Pumpkin Chocolate Chip Protein Cookies

Ingredients:

200 grams of canned pumpkin

½ c. SMOOTH almond butter

1 egg, whisked

1 tbsp honey

1 tsp vanilla extract

1 scoop vanilla protein powder

1/8 tsp cinnamon

Pinch of salt

1/3 c. Enjoy Life Mini Chocolate Chips

 

Directions:

Preheat oven to 400 degrees and line a cookie sheet with parchment paper.

 

In a mixing bowl, combine pumpkin, almond butter, egg, honey and vanilla using a hand mixer. Add protein powder, cinnamon, and salt and mix well. Fold in chocolate chips.

 

Using a tablespoon-sized cookie scoop, scoop batter onto parchment paper and spread around just a bit to increase the diameter of the cookie. Bake for 9 or 10 minutes, until cookie is cooked through.

 

Cool on baking rack.
